{"id":1618,"date":"2017-11-16T03:12:34","date_gmt":"2017-11-16T03:12:34","guid":{"rendered":"http:\/\/blogs.oregonstate.edu\/oregonketokids\/?p=1618"},"modified":"2017-11-16T03:12:34","modified_gmt":"2017-11-16T03:12:34","slug":"keto-bacon-breakfast-muffins","status":"publish","type":"post","link":"https:\/\/dev.blogs.oregonstate.edu\/oregonketokids\/2017\/11\/16\/keto-bacon-breakfast-muffins\/","title":{"rendered":"Keto Bacon\u00a0Breakfast\u00a0Muffins"},"content":{"rendered":"<p>Today we have a special guest recipe from Louise Hendon from <a href=\"http:\/\/ketosummit.com\/\">The Keto Summit<\/a>.<\/p>\n<p>Prep Time: 15 mins<\/p>\n<p>Cook Time: 20 mins<\/p>\n<p>Yield: 12 muffins<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 cups of almond flour<\/li>\n<li>1\/2 cup of ghee, melted (or coconut oil)<\/li>\n<li>3 medium eggs, whisked<\/li>\n<li>10 slices of bacon, diced<\/li>\n<li>1 medium bell pepper, diced<\/li>\n<li>1\/2 medium onion, diced<\/li>\n<li>1 teaspoon baking soda<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 350 F (175 C).<\/li>\n<li>Cook the diced\u00a0bacon, onions, and peppers in a pan. Let cool briefly.<\/li>\n<li>In a mixing bowl, add in the almond flour, melted ghee (don&#8217;t make it too hot), whisked eggs, cooked\u00a0bacon\/onion\/peppers, and baking soda.<\/li>\n<li>Line a muffin pan with muffin liners.
