Emily Esteban, from the applied anthropology program, completed her master’s thesis on Latino food preferences, working with Casa Latinos Unidos and the group OrganizaciĆ³n de Latinas Unidos (OLU). Emily interviewed mothers from the OLU group to explore food preferences and food insecurity of first-generation Mexican immigrants in the Corvallis area. As part of her agreement with Casa Latinos Unidos, Emily presented her findings to both organizations. Additionally, Emily volunteered with Casa Latinos Unidos contributing her skills to report and grant writing as well as in eliciting the organization’s theory of change.
