{"id":1968,"date":"2012-05-16T09:40:53","date_gmt":"2012-05-16T16:40:53","guid":{"rendered":"http:\/\/blogs.oregonstate.edu\/breakingwaves\/?p=1968"},"modified":"2012-05-16T09:40:53","modified_gmt":"2012-05-16T16:40:53","slug":"astoria-becomes-world-surimi-capital","status":"publish","type":"post","link":"https:\/\/dev.blogs.oregonstate.edu\/breakingwaves\/2012\/05\/16\/astoria-becomes-world-surimi-capital\/","title":{"rendered":"Astoria becomes world surimi capital"},"content":{"rendered":"<p><a href=\"http:\/\/blogs.oregonstate.edu\/breakingwaves\/files\/2012\/05\/feature_6.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-1969\" style=\"margin: 5px\" src=\"http:\/\/blogs.oregonstate.edu\/breakingwaves\/files\/2012\/05\/feature_6-300x140.jpg\" alt=\"Jae Park\" width=\"300\" height=\"140\" srcset=\"https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/181\/files\/2012\/05\/feature_6-300x140.jpg 300w, https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/181\/files\/2012\/05\/feature_6.jpg 391w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Ever wondered about the crab-flavored fish protein in your seafood sandwich, &#8220;crab&#8221; salad or California sushi roll?<\/p>\n<p>It\u2019s surimi, a fish protein paste made into various shellfish-flavored products.<\/p>\n<p>Earlier this month, Oregon State University&#8217;s Seafood Lab on Marine Drive  hosted the 20th annual Surimi School, a gathering of global industry  representatives and researchers that made Astoria for one week the  epicenter of expertise on the globally popular, gelatinous fish protein  you&#8217;ve likely had in one form or another.<\/p>\n<p>About 40 students from surimi plants, surimi seafood  (finished product) plants and others from accessory industries attended  lectures and took part in surimi labs.<\/p>\n<p>Jae Park, an OSU\u2008professor seen as the pre-eminent  expert on surimi, founded the OSU Surimi Technology School in 1993 in  Astoria. He started similar institutes in Bangkok in 1996 and in Paris  in 1999.<\/p>\n<p>For most of the school&#8217;s first decade, Oregon Sea Grant invested in the surimi program&#8217;s development and success with grants to support Park&#8217;s research into ways to improve the texture of surimi, and with direct contributions to the surimi school.
